泰式青咖喱[12P]

主料:绿尖椒、大蒜头、红葱头、姜、香茅、柠檬叶、色拉油、黑胡椒籽、芫荽籽、茴香籽、盐、香菜、鸡肉、茄子、豆角、椰奶、鱼露、糖

1 准备好做绿咖喱酱的所有材料,辣椒去籽,香菜只取茎部

2 将辣椒,香菜,姜,蒜,红葱头随意切碎,柠檬叶和香茅切细一点,放入搅拌机,再加上1到2勺色拉油,1茶勺的盐,搅拌至糊状

3 黑胡椒,芫荽籽和茴香籽入锅,小火加热1分钟带出香味

4 将香料放入杵臼内研磨至粉状

5 将研磨好的香料放入2中,用搅拌机混合均匀,制成绿咖喱酱,酱料可密封保存在冰箱里一星期左右

6 准备好汤料,鸡肉切条,椰奶事先摇晃均匀

7 炒锅内加上一大勺色拉油,大火加热,煸炒茄子和豆角,加入适量盐调味后盛出备用

8 再加入一大勺色拉油,转中火,加入3至4大勺的绿咖喱酱,炒至出香味

9 倒入200毫升的椰奶和100毫升的水,加热至沸腾

10 加入茄子豆角,糖和鱼露,小火炖2分钟至茄子豆角变软

11 最后再放入鸡肉,炖2到3分钟后加适量盐调味,盛出并洒上香菜叶
